Kid Friendly Friday - Cinco de Mayo Recipe


I love Cinco de Mayo because I love Mexican food. Any reason to make it...or no reason at all. I am sharing a fun recipe for the wee ones I found in a Kraft Foods advertisement a few years back. Taco bowls are like mini taco salads. Cute and fun to eat (a little messy).

Mini Taco Bowls

Ingredients
8 Small Flour Tortillas
1 pound ground beef
1 cup Salsa (or a packet of taco seasoning)
1/2 cup Cheddar Cheese
2 cups chopped lettuce
1 cup chopped tomatoes
1/4 cup Ranch Dressing or sour cream

Cooking Directions
Preheat oven to 350 degrees F. Microwave tortillas on HIGH 30 sec. or until softened.

Press 1 tortilla into each of eight medium muffin cups to form a bowl. Carefully fold edges of tortilla back to keep an opening for the filling. Bake 10 min.

Meanwhile, brown meat in large skillet on medium heat; drain. Stir in salsa (or prepare meat with taco seasoning according to package directions); bring to boil. Reduce heat to medium-low; simmer 10 min. Spoon about 1/4 cup of the meat mixture into each tortilla bowl.

Top evenly with cheese, lettuce and tomatoes. Drizzle with dressing or dollop of sour cream.
