
So what do you do with all of your hard boiled eggs? I like deviled eggs but my kids do not. One thing they do love is Creamed Eggs Over Toast, a recipe from my childhood. It's easy and it's a good way to use your Easter eggs....it's also a really cheap meal. And NO, I did not make this Easter Egg, isn't it beautiful?
1. Make a white sauce (I season with salt, pepper, and nutmeg)
2. Add sliced hard cooked eggs
3. Serve over toast (I take a pizza cutter to the toast to cut in pieces and serve eggs over top)
If you don't have a recipe for white sauce I use the following low fat recipe:
6 tablespoons flour
3 cups low-fat milk
In a heavy medium saucepan, whisk flour to remove any lumps.
Gradually add 1 cup milk whisking until smooth.
Add remaining 2 cups of milk and seasoning.
Cook over medium heat, whisking constantly, about 10 minutes, until mixture thickens and boils. Remove from heat.
